KEY LIME PIE This is an incredibly easy to make dessert, if you know how to make a pie crust. 1 9" pre-baked pie crust or a Graham cracker crust, if you prefer that. 1/2 cup lime juice (3 to 4 regular limes -- it isn't necessary to use the tiny "key limes" [also called "Mexican limes"] which are hard to find and are relatively expensive) 1 can sweetened condensed (not evaporated) milk 3 egg yolks Optional decorative topping and accompaniment: 1/2 to 1 cup whipping cream 1 to 2 heaping tablespoons confectioners suger 1/4 to 1/2 teaspoon vanilla extract Pre-heat oven to 350 degrees. Beat the ingredients together slowly until the lime juice and egg yolks are thoroughly incorporated into the condensed milk. Pour into pre-baked pie shell and bake for 12 minutes. If desired, after the pie has thoroughly cooled, decorate the top with sweetened whipped cream (I put a ring of cream around the outside and a dab in the middle). [This uses 1/2 cup whipping cream.] Put any extra whipped cream on the table for guests who want more. [If you do this, use a cup of whipping cream.]
